FISH AMARISTARI (serves 4)

2 lb 4 oz/1 kg fish
Oil for frying
to marinate:
½ cup lemon juice
1 tsp grated ginger
1 tsp black pepper
1 tsp salt
Batter:
¾ cup besan/chick pea flour
3 tsp garlic-ginger paste
2 tsp ajwain
1 tsp chili powder
4 no: red chilies (snipped)
1 tsp: Baking powder
½ cup iced water
salt to taste




  • Combine all the marinated ingredients. Pour over the fish and set aside for 1 hour.
  • Remove the fish from the marinade and pat dry.
  • Combine all ingredients for the batter. Coat the fish in the batter and set aside for 15 minutes.
  • Fry in hot oil until golden brown. Serve hot.
